Norma's Crunchy French Toast
We’ve celebrated a lot of special moments over brunch at Norma’s in the past 20 years. It’s an always busy restaurant located on the main floor of Le Parker Meridien hotel in NYC. Their breakfast dishes are all over-the-top, huge portion creations. I’ve tried a few other items off their menu, but always go back to this dish. I love the crunchy texture of the Rice Krispies on the outside and the drizzle of caramel is delicious. Luckily they published a cookbook, so no need to guess how to recreate the dishes at home!
Tips:
No need for maple syrup with this French toast
Challah or any egg rich bread is great for this dish. You need a thick slice for the coating to adhere to.
Norma's Crunchy French Toast
Recipe from Norma’s Restaurant in Le Parker Meridien Hotel, NYC
Makes 12 pieces
PREP 15 minutes
COOK 15 minutes
INGREDIENTS
Crunchy mix
4 cups Rice Krispies
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon cocoa powder
1 tablespoon sugar
French toast batter
4 eggs
¾ cup sugar
1 teaspoons vanilla
½ tablespoons cinnamon
2 cups heavy cream
½ tablespoons Grand Marnier
French toast
1 loaf of brioche
Batter
Rice Krispies mix
4 tablespoons clarified butter
INSTRUCTIONS
To make crunch mix-
Put Rice Krispies and other ingredients in a pie plate. Mix.
To make batter-
In a large mixing bowl, whisk the eggs, sugar, vanilla and cinnamon.
Mix in cream and Grand Marnier.
To make French toast-
Soak bread in batter. Drain excess off.
Press bread into the Rice Krispies mix to cover all side of the bread.
Cook over medium heat for 2 minutes on each side until golden brown.
Drizzle caramel sauce on toast before serving.
