In the summer, when we are at the beach, I have this for breakfast several times a week. It hits all the right notes with sweet, creamy, crunchy, tart. You can add whatever you desire to the Açaí puree to make it your own. This is how I like it and just a suggestion.

Tips:

  • Most markets in the healthy, organic section carry packets of Açaí puree. You can even buy it at Amazon.

  • I always have frozen bananas in my freezer. There is always one left in the bunch that ripened too much for my family to eat. These will make banana bread or this bowl.

Acai Bowls

Makes 2 servings

PREP 10 minutes

INGREDIENTS

1 frozen banana 

1 cup of frozen fruit- any assortment you like- berries, pineapple, peaches, etc.

3/4 cup apple juice

2 packets frozen acai puree - broken into pieces

assorted toppings - think almond butter, nuts, seeds, fresh fruit, granola, coconut, banana slices etc.

INSTRUCTIONS

  1. In a blender combine the frozen banana, cup of frozen fruit, apple juice and Açaí puree. Blend until smooth. It will be a thick smoothie.

  2. Divide the puree into two bowls. Top the Açaí with a scoop of almond butter, 1/4 cup of granola, some blueberries and coconut flakes.
