Peach and Burrata Salad
In the height of the summer, when no one wants to turn on the stove, this is a beautiful and delicious appetizer or salad to serve. Most people will expect tomatoes in a salad like this, but the sweetness of the peaches compliments the cheese so well. With so few ingredients it’s important to get the best ingredients. Local fruit and cheese will make all the difference in flavors.
Tips:
If you don’t like peaches or can’t find them you can substitute any stone fruit you like- apricots, plums, nectarines.
When you are grilling fruit, you want them to be a little firm. If the fruit is too ripe, it will fall apart while cooking. If your fruit is that ripe, then don’t bother grilling the fruit, just serve them uncooked.
