BBQ Baby Back Ribs

Feels like summer when we start to make ribs around here. The process takes hours, but the amount of actual work is minimal. Over the years I’ve found that cooking the ribs slowly in the oven until they are tender, then dressing them with your favorite BBQ sauce is the easiest and most tender method for ribs. If you miss that smokey flavor from the grill you can always finish them off for a few minutes on your grill, which will caramelize the sauce, giving you those burnt pieces.

Tips:

  • You can prepare the ribs up to Step 5 in advance. Just keep the ribs covered in refrigerator. When you are ready to enjoy, just warm the ribs in a 300 degree oven for 20 minutes, drain the pan and continue with the recipe.

  • Use the leftover shredded pork in quesadillas, nachos and tacos.

  • This recipe is easily doubled or split in half.

BBQ Baby Back Ribs

INGREDIENTS

2 racks Baby Back Ribs

2 bottles of beer, can be anything you enjoy drinking

Your favorite BBQ sauce, we love Sweet Baby Rays

Salt and pepper

INSTRUCTIONS

  1. Preheat your oven to 300 degrees.

  2. Using a chef knife, cut the racks of ribs into 3-4 rib pieces. I like to portion the ribs this way and do it now before the ribs are too tender and fall apart.

  3. Place the ribs, meat side up, in a large roasting pan. Season the meat with salt and pepper. Pour beer into the roasting pan, avoiding the ribs, until the beer comes up 1 1/2” in the pan. How many bottles of beer you use will determine how large your roasting pan is.

  4. Cover the pan with tin foil and place in the oven for 3 hours or until the ribs are tender when pierced with a knife.

  5. Remove the pan from the oven and drain any liquid that has accumulated in the bottom of the pan. Slather on your BBQ sauce. You can either finish the ribs on your grill for a few minutes until the BBQ has really thickened and is getting brown in some spots or you can turn your oven up to 400 degrees and do it in the oven. Either way, watch them carefully. The sugar in the sauce makes it burn quickly, so it shouldn’t take more than a few minutes.

  6. Serve and enjoy!
